Bikini

Yields 10 people

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Combine all the items in a saucepan, bring to a gentle boil, mixing so the sugar melts. Next, take off the burner and let it to cool entirely. Decant into an sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to one month.

Preparing the Batch Mix: Combine all the liquid ingredients into one sizeable container, let it rest for 60 minutes, then strain best through a fine cloth, making it perfectly clear.

For serving: Pour 85ml of your cocktail base to a stirring glass filled with ice, gently stirring lightly for about 60 seconds to chill. Strain to a cold coupe glass or a similar vessel, decorate with the cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
